I'm at the Cortona hotel and to use the internet, they give you a blue wire that you connect to your laptop then to the wall. Can they monitor what I visit?

Yes. The hotel IS your ISP. Not to mention, it's an extremely unsecured network. For more information, read the website provided in the source box.
