Zuppa Toscana (Tuscan Soup) is a traditional Italian recipe (from Tuscany) for a classic soup of sausage, bacon and greens in chicken stock thickened with potatoes and cream. The full recipe is presented here and I hope you enjoy this classic Italian version of: Tuscan Soup (Zuppa Toscana).

450g spicy Italian sausage, crumbled
225g smoked bacon, chopped
1l water
870ml chicken stock
2 large potatoes, washed and cubed
2 garlic cloves, crushed
1 onion, chopped
280g kale or Swiss chard, chopped
250ml double cream
salt and black pepper, to taste

Add a little oil to a frying pan or skillet and use to fry the sausage, crumbling even further as you fry. Cook until well browned then drain any excess oil and set the sausage aside. Return the pan to the heat and cook the bacon over medium heat. Drain the oil and add the bacon to the sausage.

Meanwhile, combine the water, stock, potatoes, garlic and onion in a pan. Bring to a simmer over medium heat and cook until the potatoes are tender (about 25 minutes). Add the sausage and bacon to the pot and simmer for 10 minutes further then add the kale or chard. Cook for 1 minute then stir-in the cream and season to taste. Allow the soup to heat through then ladle into warmed soup bowls and serve
